Bean Eggs and Not Ham

It’s that time of year: despite wearing one of Abby’s handmade dog sweaters, Max still gets cold, and often camps out by the vent in my bathroom when the furnace is running.

This autumn might well be called “The Autumn of Beans,” because I have made two pots of beans (one pinto, one black), and have been putting them in meal after meal for nearly two months. Among these meals has been breakfast, which Abby and I like to share on Sunday mornings. I like to ladle my beans onto my eggs. I got the idea from years ago dining at Waffle House, where I often got chili cheese eggs.

I’m not a huge meat-replacer vegetarian, but one thing I like with my breakfast is MorningStar Farms facon or fausage. It’s a really nice meal.
